Arrowroot (Maranta arundinacea) is a tropical tuber native to Indonesia.
The underground stem with multiple roots, (the rhizome) stores its starch and energy. It’s high in protein and several nutrients;
Fiber, Folate (vitamin B9), Phosphorus, Iron, & Potassium.
